  1. Prepare 4 cups Fresh curd
  2. Get 1 cup fine sugar (you may take extra)
  3. Prepare 1 cup Alphonso mango puree (see recipe)
  4. Make ready 10 strands kesar
  5. Take 1 tsp cardamom powder
  6. Take 1 tablespoon Warm milk
  7. Get 1/4 cup Chopped almonds and cashews
  8. Get 1/4 cup Milk powder
  9. Take 1/4 Cup Chopped mango cubes
Steps to make Mango Shrikhand/ Aamrakhand:
  1. First, take the curd in a clean muslin cloth over a colander/sieve placed on a bowl. Then tie the ends and make a bundle. Let all the water collect in the bowl.
  2. The water being nutrients rich can be used in rotis and curries. Then hang this bundle for 6 hours in a cool place till all the water is drained off.
  3. Chill the hung curd for one hour. Take curd, milk powder, mango puree', cardamom powder and sugar in a glass bowl. Whisk the mixture with a wire whisk for 5 minutes.
  4. Then slowly press the creamed mixture through a steel sieve with the help of a flat spoon or spatula, into another bowl to get a creamy mixture without lumps. (Another way is to whip it with electric hand blender which will give a creamy texture.)
  5. Lastly stir in saffron milk and 1/2 of the crushed nuts and mix well. Chill for 2 hours and then serve in serving bowls garnished with reserved nuts / chopped mango and enjoy the divinely creamy dish.
