  2. Take a bowl, add maida, add salt, hot oil, ajwain and lemon juice to make samosa crispy, make a semi hard dough with lukewarm water as required.. Cover with a lid, keep aside for at least 15 minutes to rest it.
  3. Take a pan add 2 tsp oil, turn on gas on a medium flame, add jeera, hing, ginger chilly paste, mashed potatoes and green peas. Mix well, now add salt, turmeric powder, aamchur powder, sugar, garam masala and chopped coriander, saute it for 1 minute, mix well, turn off gas, keep aside to cool completely..
  4. Now make equal size of dough balls, take a ball, make a medium size chapati, cut in half, make a cone, apply little water to bind it, add potatoes and green peas mixture in it, press gently, close it by applying water, give a shape of triangle shape to samosa, make all samosa like that.
  5. Take a frying pan, add oil to deep fry, turn on medium flame gas, when oil heat up, turn into slow flame, put samosa in batches to fry golden yellow colour to make crispy.. Fry all samosas in same manner..
  6. Hot, crispy, yummy and drooling samosas are ready to serve.. Serve hot with tea, coffee, chutney or ketchup, as per your taste buds..
