  1. Prepare Aloo
  2. Take Frozen or Fresh Matar
  3. Make ready Green Chillies

  9. Prepare Dried Red Chillies
  10. Take Coriander Seeds

Instructions to make Sookhe Aloo Matar:
  1. Wash Aloo properly properly, peel off their skin & chop them in medium-small size pieces.
  2. Now again wash them properly so that their starch is completely released.
  3. Chop Green Chillies in slices & Ginger very finely.
  4. Now take a pan, add special Masala in it & keep the gas on low flame.
  5. Roast them for 3-4 minutes, till they start releasing a fragrance.
  6. After 3-4 minutes, when they start releasing a fragrance, turn off the flame & transfer the Masala in a plate.
  7. Now let it cool down properly before grinding it.
  8. After some time, grind it finely into powder in a mixer grinder.
  9. Now take a kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
  10. When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit.
  11. After some time, again turn on the gas & keep it on medium flame.
  12. Then add 1/2 Teaspoon Sarson & 1 Pinch Hing in it & let them sizzle.
  13. When they start sizzling, add finely chopped Ginger in it & cook them for 1-2 minutes.
  14. After 1-2 minutes, add chopped aloo pieces in it & cook them for 3-4 minutes.
  15. Then add 1/2 Teaspoon Haldi Powder & 1/2 Teaspoon Kashmiri Laal Mirch Powder in it & mix them.
  16. Now close the lid & cook them for 4-5 minutes till aloo turns soft.
  17. After 4-5 minutes, open the lid, add 1/2 Teaspoon Salt & 1/2 Teaspoon Rock Salt in it & mix them properly.
  18. Then add 1 Cup Frozen or Fresh Matar in it with special Masala powder in it & mix them properly.
  19. Now cook them for 2-3 minutes so that Matar also turns soft.
  20. After 2-3 minutes, add sliced Green Chillies, 1 Teaspoon Garam Masala & 1/2 Teaspoon Roasted Kasuri Methi in it & mix them properly.
  21. Your Sookhe Aloo Matar are ready to be served.
