Prepare 3 tomatoes
Take 1 boiled potato
Get 1/2 cup boiled peas

Instructions to make Banarasi Tamatar ki chaat:
To prepare this chaat first prepare Stuffed Tomatoes. - - For this wash and clean the tomatoes under cold running water. Now cut off the top of the tomatoes. With a help of a knife, scoop out the seeds and pulp to get a cavity. Once it's done, keep the tomatoes aside. - Sprinkle Little Rocksalt in each cavity. Also, reserve the seeds and pulp for the tangy sauce to go with it.
To prepare the filling for the tomatoes, take a glass bowl and add mashed boiled potatoes and boiled peas in it. - Then add green chili, chopped ginger, few raisins, chopped coriander leaves, dry mango powder along with red chili powder and salt.
Mix the ingredients well. Now heat ghee in a pan over medium flame. Once the ghee is sufficiently hot, add the potato and peas mixture.
Saute for 3 to 4 minutes, stirring continuously. After it's done, transfer the mixture to a bowl and allow it to cool. Now with a help of a spoon, carefully stuff this filling in the tomatoes.
Bake these stuffed tomatoes in a pre-heated oven at 200 degree Celsius for about 10 minutes. Alternatively, you can shallow fry them in 1/2 tablespoon ghee till the tomatoes are cooked but firm.
Once these stuffed tomatoes have cooled down, slit them into four lengthwise. - Prepare the sauce for the banarasi chaat now. Now heat ghee in a pan over medium flame. Once the ghee is sufficiently hot, add the seeds and pulp you had kept aside, add a generous pinch of hing, salt, sugar, two tablespoons of tomato ketchup, two tablespoons of lemon juice, chili powder as per taste, and a half a cup of water.
Let it simmer till you get a nice thick sauce. Now add the stuffed tomatoes carefully with the stuffing facing you. Keep pouring the sauce on top of it for a good coat. Garnish with chopped coriander leaves and nonspicy bhujia (sev).
