Prepare 400 gms Approx. Plum Preserve (see recipe)
Get 1 whole dry red chilli
Take 1/4 cup Tamarind water (plupy kind)
Make ready 1/2 Tsp Ginger powder
Prepare 1 generous pinch of Black rock salt
Prepare 1-2 tbsp jaggery / sugar
Take 1-2 tbsps Mustard oil
Make ready 1/2 Tsp Paanch Phoran
Take 1 tablespoon Chilli flakes (optional)
Make ready as required Few Cherry Tomatoes
Prepare as needed Cashewnut (optional)
Take as per need Raisins (optional)
Make ready 1/2 tbsp Roasted Cummin and coriander seeds crushed
Steps to make Plum Tomato Chutney:
Cut or chop the tomatoes. Heat oil in a pan. Add the red dry chilli and Paanch Phoran and let it crackle, then add the tomatoes and saute if for a minute or two. Add the plum preserve (add the plum and dates if you using fresh instead of preserve) and mix well, add the ginger powder and tamarind too.
Add the rock salt, chilli flakes (optional), check sugar (as preserve already has sweetness in it) and add if needed. Cook till it thickens and reaches the desired consistency. Add the crushed roasted Cummin and coriander and mix well. Your Sweet Sour Chutney is ready.
