Instructions to make Lehsuniya Millet Dhokla:
Take barnyard millet and tapioca (sabudana) in a mixer grinder and make a coarse powder.
Take the mixture to a mixing bowl. Add curd, and ½ cup of water mix well. Now add salt and sugar. Add oil. Mix everything and keep aside for 5 minutes.
Fill water in a steamer and keep it for boiling. Place a stand. Take dhokla thali or cake mould. Smear it with oil. Keep aside.
Now the above mixture will appear thick. Add some more water and make an idli like batter consistency. - Take 1 tbsp of batter in a bowl. Now take 2 different bowls and divide the batter into 2 equal measures.
Keep one bowl aside and to the other bowl add 1tsp of fruit salt. Mix well. Now pour the batter into the greased dhokla plate. Place this dhokla plate in a steamer and let it steam for 5-6 minutes.
In a mortar and pestle crush the garlic pods and salt to make a paste. Add Kashmiri red chili powder. Mix well. Add 1 tbsp of water and make a runny paste. Mix this paste with 1 tbsp batter kept earlier. Mix well and add ½ tsp of fruit salt.Mix everything together.
Take the dhokla plate out of the steamer. The upper layer of the dhokla should have been hard and form. To this add the garlic chili batter. Thinly smear all over the dhokla. Again place the dhokla plate in the steamer for 3-4 minutes.
Now take the second bowl of batter. Add the fruit salt and mix well. Take out the dhokla plate from the steamer and pour the batter covering the garlic chili layer. Steam again for 5-6 minutes. Pierce a knife into the dhokla if it comes out clean, dhokla is done.
Remove the dhokla plate from the steamer and let it cool down a little. Cut the dhoklas into the desired shape.
For the tempering, heat oil in a pan. Add mustard seeds, sesame seeds and let it splutter. Add asafoetida and curry leaves. Add water and let it boil. add sugar. once it starts boiling, add lemon juice and switch off the flame.
Pour the tempering over the dhokla and serve with deep-fried green chilies, sauce, or chutney. Enjoy rains!
