Take Microwave bowl of 4 cups size
Steps to make Quick Fried Rice (leftovers):
Boil the cauliflower florets and drain them as you would usually. Then use a cheese grater and grate the cauliflower florets. You can even do this if you have the bulk cauliflower.
Now grab the frozen mixed vegetables and cook them in the microwave as you usually would with water just about an inch over them. It normally takes about 3 to 4 minutes in my 1200w microwave.
Once cooked, drain the excess water and let cool. Now heat up a wok and add the oil/ghee/butter to it. As it turns hot, add the grated cauliflower in and sauté them well until they are slightly roasted. Add in the cooked vegetables and toss in the preferred amount of salt and pepper powder.
Reduce the heat to low, sprinkle (not pour) about a tablespoon of water and let it simmer for 5 minutes. Once done; switch off and pair it with sides of your choice. Quick, healthy and different than the regular starch component.
