As the mango season has come to an end, I made aamrakhand with the last alphonsos of the season. Although the aromatic fragrance of the alphonso mango works best for aamrakhand, you could use.

Instructions to make Aamrakhand:
  1. Take curd in a muslin cloth and keep it overnight in the fridge to make hung curd.
  2. Wash, peel and cut the mangoes into cubes and blend it into a smooth paste.
  3. Add this purée into the hung curd and mix well till it turns into a smooth paste with the help of a whisk.
  4. Add honey to it as per your taste to reduce the sourness of the curd.
  5. In warm water take 5-6 strands of saffron and let it sit for 10 mins. Add this to the mixture.
  6. Add some cardamom powder and dry fruits and give it a nice mix.
  7. Cover and keep in the refrigerator for chilling it… serve it chilled topped with some more dry fruits and cardamom powder.

As the mango season has come to an end, I made aamrakhand with the last alphonsos of the season. Although the aromatic fragrance of the alphonso mango works best for aamrakhand, you could use. While this aamrakhand is the perfect shrikhand variant to make during the mango season, you can also make this traditional delicacy all round the year, if you have Alphonso Aamras stocked in your freezer.
