  1. Get 1 onion, chopped
  2. Take 2 large potatoes
  3. Make ready 2 sweet potatoes
  4. Get 2 Diced carrots
  5. Get 1 bunch green and yellow beans
  6. Take 1 large bell pepper diced
  7. Prepare 1 stick green scallions
  8. Take 1/2 cup spinach
  9. Get 1 liter boiling water
  10. Get 3 stick thyme
  11. Make ready 1 tbsp salt
  12. Get 1 tbsp Jamaican style curry powder
  13. Take 3 clove garlic minced
  14. Make ready 1/3 scotch bonnet pepper
  15. Take 1 cup white rice
  16. Prepare 4 tbsp Coconut Oil
  17. Prepare 1 tsp Brown sugar
  18. Make ready Flour
  19. Prepare 2 piece Corn
Steps to make Curry Veggies and Rice:
  1. Heat coconut oil. Dice white onion and cook until its barely brown.
  2. Add 1/2 to 1 litre of boiling water to pot until veggies are covered. Add potatoes , corn and sweet potatoes. Add a tablespoon of curry powder, minced garlic , salt, thyme and brown sugar. Boil on medium for about 10 min until potatoes are cooked. Stir occasionally. Add water if needed.
  3. Add peas, bell peppers, scallions and spinach.
  4. Add flour to thicken the water to a gravy. Add flour and water as needed.
  5. Make rice separately. 2 cups of water to 1 cup of rice. Add a pinch of salt and pepper. Small dices of scotch bonnet if you're brave. Clove of garlic. Pinch of brown sugar. A little bit of scallions. Bring to a boil then simmer on med-low with lid coverd if it has a hole in it.
