Get 2 mangoes alphonso preferred
Take 500 ml milk
Take 1/2 cup sugar
Prepare 1 sachet milk powder
Make ready 3-4 strands Kesar(safforn) strings
Prepare handful Crushed dryfruits optional
Steps to make Mango rabdi ice cream:
In a kadai heat milk, once boiled continue to cook on medium flame scrapping the sides and stirring so that it doesn't burn
Once the milk quantity reduces add milk powder and continue to cook and stir properly
Once milk is half the quantity lower the flame and add sugar, dry fruits and mix
Add kesar and mix nicely
Switch off the flame your rabdi is ready
Take a mango and remove the top and with help of peeler carefully remove seed.
Take care that the mango holds the shape.
Once the seed is removed, fill the gap with prepared rabdi.
Repeat for the second mango
Place the mango in small glasses so that it remains straight.
Now keep in the freeze for 2 hours.
After 2 hours remove and carefully peel the skin.
Now cut in to small circles and serve
You will see beautiful rabdi surrounded by mango.

Chef Tip: In case you break the skin in process of removing seed, dont worry you can use toothpick to stick the sides together, once frozen it holds shape.
I have not added dryfruit since my daughter doesn't like cooked dryfruit.
