To get started with this recipe, we have to first prepare a few ingredients. You can have mango delight using 7 ingredients and 6 steps. Here is how you cook that.
The ingredients needed to make Mango delight:
Prepare 1 cup alphonso mango pulp
Take 1 cup milk
Take 1/2 cup thickening cream (fresh cream)
Get 9 tsp sugar
Take 1 pinch saffron strands soaked in 2 tbsp warm milk
Take 2 tbsp Chopped cashew and pistachio nuts
Make ready 1/2 cup chilled pieces of alphonso mangoes
Steps to make Mango delight:
Soak saffron in 2 tbsp warm milk for 1/2 hour.
1. Combine mango pulp, milk, fresh cream, saffron milk and sugar in a pot/bowl. Run a blender in it to mix them well.
The mixture will be slightly thicker than regular mango ras. Refrigerate it until the time of serving. Garnish with nuts just before serving to maintain the crunch. Add chilled pieces of mangoes also at this time. Serve chilled with Puri.
Apart from the flavour, saffron will also help with bright orange colour.
Notes: 1. Alphanso is the best type of mangoes one can use for this recipe as the better the quality of the mangoes, the better the taste! - 2. Mango delight is supposed to be thicker than regular ras (juice). That's the reason why you use the pulpy mangoes rather than juicy ones. - Thickenig cream/fresh cream can be by custard milk, but that changes the flavour of it a bit. However, if you have no option, it is not bad too. 3. You can also add vanilla ice cream at the time of serving.
This is the thickenig cream I used. It is different from the whip cream or dessert cream. This cream is almost like the malai (cream from milk), but being an artificial cream, it does not have that typical flavour of malai. This cream is used to add the thickness as well as the creamy texture to the dish. Not sure if you can use the whipping cream or the dessert cream or not. I am going to try experiment on that next time.
