Instructions to make Dahi Bara with ghugni Dum Aloo:
Soak the urad daal for about 4-5 hours. Then grind it. Don't add water. (If needed then just 1-2 tsp).
Add salt and black pepper and whisk it nicely so that dal paste gets air and vada will be soft.
If you like then mix pinch of hing Heat the oil. And fry them. Once they are fried transfer them to warm water. Soak for 10-15 minutes.
In a big bowl pour curd and mix it nicely. Add all the masala mentioned in chaas section.
In a small pan add lil oil add jeera, mustard seeds, Curry patta and pinch of hing.
Now let it cool down this tadka then add in the chaas.
Take vada from water and Gently press vada then transfer to chaas, soak them in chaas for at least 1 hour.
Dum aloo with bhugni - In kadayi take 3-4 tsp oil, cut the boiled potatoes and fry them. Keep it aside.
In same kadayi add little oil add jeera, hing. Add onion and nicely cook them.
Once onion are pink in colour then add tomato, salt and cook them till they turns out soft.
Add all the masala mention in sabji section (don't add garam masala now)
Now add boiled bhugni/matar and fried potatoes and little water. Mix them and cook for 5-6 minutes. Add garam masala.
Let's assemble - take vada from chaas, gently press and place in the plate, now add mashed curd, dum aloo sabji, chutney, onion, coriander leaves. Enjoy!!!
