  1. Prepare peas or matar dana
  2. Get dhania ( corinader leaves) for dhania paste
  3. Prepare green chillies
  4. Take ginger
  5. Take garlic cloves
  6. Make ready medium sized aloo( potatoes) cut lengthwise
  7. Prepare mustard oil
  8. Get hing/asafoetida
  9. Make ready jeera/ Cumin seeds
  10. Make ready medium sized onion chopped finely

  13. Get fresh tomato puree
  14. Prepare haldi( turmeric) powder
  15. Make ready Kashmiri red chilli powder
  16. Take dhania( coriandar) powder

  19. Take garam masala powder
Steps to make Matar Nimona:
  1. Firstly take a mixer jar, add 1 cup matar, grind it to a fine paste. Add very lil water if needed while grinding.
  2. Take a pan, add 2 tbsp oil, fry this paste till light brown. Keep aside.
  3. Now take all the ingredients of dhania paste in a mixer jar, grind it to a fine paste, keep aside.
  4. Shallow fry aloo in 3 tbsp oil till light brown, keep aside.
  5. Take a wok or deep bottom pan, add oil, heat it.
  6. Add hing & zeera, let it splutter.
  7. Add onion, stir fry till light brown.
  8. Now add ginger garlic paste, saute it till rawness is released.
  9. Add dhania paste, stir fry it for 5 minutes.
  10. Now add tomato puree & salt, stir fry it for 5 minutes.
  11. Add haldi, dhania & red chilli powder, also add lil water, stir fry it till oil has oozed out.
  12. Add matar paste now, stir it nicely.
  13. Add desi ghee & garam masala powder, stir fry it till oil separates.
  14. Add 2 1/2 cup water, mix it well, give a boil.
  15. Now add aloo & 1/2 cup peas, give a stir. Let it boil for a minute.
  16. Lower the flame now, cover it with the lid, cook it till veggies aur almost cooked.
  17. Switch off the flame, open the lid after 5 minutes.
  18. Take out in a serving bowl, have it with Roti or Paratha.
