Get 10 ml oil
Get 1-2 Cardamoms
Get 1 small stick to cinnamon
Get 1-2 cloves
Take 6-8 black peppercorns
Prepare 1 medium size onion
Take 1 medium size tomato
Prepare 6-8 cloves garlic
Prepare Handful cashewnuts
Take as required Keep a tbsp of boiled potato It gives nice taste and thickness)
Prepare For making kofta curry
Prepare as required Fried lauki carrot koftas
Prepare Handful steamed green peas
Make ready Prepared masala paste
Make ready 30 ml oil
Take to taste Salt
Prepare 1/4 tsp turmeric powder
Take 1/2 tsp red chili powder
Take 3/4 tsp curry powder
Take 1/2 tsp sugar
Make ready 1/2 tsp crushed Kasuri methi
Get 1 tbsp fresh cream
Get 1 tsp fresh cream for garnish
Instructions to make Lauki and carrot kofta curry:
Grate lauki and carrot. In a colander put these grated lauki and carrot. Add little salt and mix. Keep it as such for 15 minutes. It releases water. Squeeze the water and discard it.
Now add salt, turmeric, red chilli powder, curry powder, coriander powder and wheat flour. Add ginger paste. Mix and make a dough type of mixture. It must not be runny.
Now heat the appe pan. Put little oil into each cavity. Take small portions and put into each cavity. Let it cook and get fried in slow to medium heat. - Flip and fry the other side too.
Lauki carrot koftas are ready. Keep aside. - Now prepare masala paste. - Heat kadhai with oil. Add cardamom, black peppercorns, cloves and cinnamon. Saute.
Add chopped onion and saute. Next add garlic cloves and continue sauteing. Next add cashews. Saute. Next add tomato and fry till tomato are softened.
Let it cool. Take these in a blender jar. Add boiled potato. Add little water and blend smooth. - If required strain.
Masala paste is ready. - Next heat a kadhai. Add oil. Add the prepared masala paste.
Add salt, turmeric, red chilli powder, curry powder and sugar. Mix and cook.
As masala looses it's rawness add the fresh green peas. Mix and continue cooking. Add little water if needed. As flavours combine with each other, add fresh cream. When you reach the required consistency, add some Kasuri methi. Add the fried koftas. Need not cook anymore. Koftas will absorb the flavours. Let it settle for 2-4 minutes.
Lauki carrot kofta curry is ready… Garnish with fresh cream and serve hot…
