  3. Add the pork and chicken and stir fry on a high heat until lightly browned, then add the shrimps and stir fry for 2 minutes
  4. Add the lime or lemon juice, fish sauce and sugar and stir fry until the sugar has dissolved
  5. Drain the noodles and add to the pan with the remaining tablespoon of oil
  6. Toss all the ingredients together
  7. Pour on the beaten eggs stir fry until almost set, then add the chilli and bean sprouts
  8. Divide the peanuts spring onions and coriander leaves into to and add half to the pan
  9. Stir fry for 2 minutes, then tip onto a serving platter
  10. Sprinkle on the remaining peanuts, spring onions and coriander and serve at once
