Steps to make Nutella Cheesecake:
For the crust: preheat oven on 170 degrees, crush in a mixer the cookies, melt the butter and mix well in a bowl. Place the over rack to the third lower position. Wrap the outside bottom of a cake tin with foil. Place inside at the bottom of the cake tin the cookies mix with butter and make sure you create a layer. Press and bake for 10 min.
For the filling: Reduce oven to 150 - degrees. In a big mixing bowl now beat the Philadelphia cream cheese and sugar until mixed well and until it looks creamy. Add nutella, vanilla extract and sea salt, mix well on low speed. Scrap the sides well. Now on low speed mix in well the heavy or fresh cream. Place in a bowl and with a spatula gently stir in the eggs. Mix well slowly. Now you can pour the butter you have just created over the crust.
You have to now place the cake tin, inside a roasting pan, and fill that pan with hot water until the middle. This will help cook evenly the cheesecake. Bake for 1 hour. Check edges are set and middle jiggles. Turn oven off but keep the cheesecake inside the water bath inside the oven for an hour. Then remove from oven. Run a very think knife around the pan to make sure it doesn’t stick anywhere. Let it cool COMPLETELY in room temperature and place inside fridge overnight.
To make the Nutella glaze: in a small casserole heat the fresh or heavy cream on medium heat, once warm enough, remove from heat and add in the nutella. Stir well until very smooth.
Remove the sides of the pan, place cake in a rack and pour the nutella cream/sauce you have just made. Use a spatula to smooth the edges, and place in the fridge for 1 hour. Before serving place beautifully flowers, strawberries or any kins of berries or nuts.
