Take 4 tbsp Desi ghee
Get as needed Salt
Prepare As needed Turmeric powder
Take 1 inch ginger
Get 2 tsp jagerry
Get For Bhaji saag
Get 1 green chili
Make ready as required Bhaji saag or amaranth leaves
Prepare 1 cup badi(sun dried lentil dumplings)
Take as per taste Salt
Prepare 1/2 tsp sugar
Take For potala bhaja(parallel fry)
Make ready 5-6 Potala or parwal

Make ready 1/2 tsp turmeric powder
Take 1/2 tsp red chili powder
Prepare 1/2 tsp garam masala

Make ready 2 tsp rice flour
Get For kheer
Prepare 4 tbsp rice
Make ready 1 cup sugar
Take 3-4 cardamom
Make ready 1 ltr milk
Make ready 1 cup water
Get as per taste Dry fruits (optional)
Steps to make Odia Satvik bhojan:
For steamed rice:- Take a large pot, add 5 to 6 glasses of water. Keep this in the flame to boil. At the same time wash some rice(arua bhata). Add the rice to the water and cook it until the rice mashed in between your fingers properly. Strain the Water and keep aside.
For dalma: Take a pressure cooker add 2 cups of water and add all the vegetables like potatoes, sweet potatoes, brinjal, raw banana, papaya and pumpkin (each cut in squares shapes. Add 1 cup arhar dal. Add turmeric powder,salt as needed and 2 tsp jagerry. Pressure cook it until 6 to 7 whistles.
Tadka for dalma:- Heat a pot. Add 2 tbsp desi ghee. After the ghee became hot add cumin seeds, mustard seeds, red chilies and chopped ginger and saute for 1min. Finally add the pressure cooked dalma and stir it. Add 1tsp desi ghee from top and cover it immediately.
Potal bhaja:- In a large bowl take parwal sliced from middle. Add all the dry ingredients Such as turmeric powder, red chili powder, garam masala powder, salt as needed, sugar and rice flour. Add one to two tsp water to it and mix this well. Heat a pan, add 2tbsp veg oil and fry the parwal until both sides turns golden brown.
Bhaji saag:- Heat a kadhai. Add 1cup badi (sun dried lentil dumpling) and fry until the badiyan turn a little golden. Take it out and keep aside. Now add 2tsp oil to the same kadhai. Add 2 green chilies, add the saag along with some salt and sugar and the badi. Cook it until the saag leave its water and keep this aside.
Rice Kheer:- Wash the rice and soak it for 30mins. Heat a large pot. Add 2tbsp desi ghee. Add the soaked rice and fry for 2 minutes. Add one Bay leaf and fry for another 2min. Now add 1cup of water and cover the lid for 15mins. Now remove the cover and add 1ltr boiled milk and cook it fir 15mins. Now add 1cup of sugar and cardamom powder and cook the kheer until the rice breaks and cooked properly.
