  1. In an electric skillet, heat canola oil to 375°f. If you do not have an electric skillet, a cast iron or heavy bottomed large deep skillet works as well.
  2. While your oil is heating, in a large bowl or paper sack mix together the dredge ingredients.
  3. Dredge the chicken pieces 3 at a time in the flour mixture and pat/shake of excess flour. Set aside on a baking rack/sheet until all pieces have been coated.
  4. Carefully add the chicken pieces to the skillet by gently nestling them in evenly spaced.
  5. Let brown lightly on first side ( 5-8 mins) before turning or moving the chicken. Once turned on the second side leave to cook 5 minutes as well. .
  6. Cover with lid, but not fully. With the electric skillet we set the lid on like a diamond rather then squarely. Continue turning chicken every 5-8 minutes until the outside becomes deeply golden brown and crisp, and the juices run clear and meat begins to pull from the bone freely and easily.
  7. Remove chicken from skillet and place on a drying rack or a plate, lined with paper towels or a brown paper sack. We serve with country sides like mash potatoes with gravy, corn, and greens.
